About Us:
TNB Cafe is an established, bustling specialty coffee and dining venue in Western Sydney. We pride ourselves on delivering an exceptional dining experience, premium specialty coffee, and an innovative, high-quality daytime menu. We are looking for an experienced, passionate, and highly organised Full-Time Chef to join our team, lead our kitchen operations, and elevate our culinary offerings.
Core Duties and Responsibilities:
As our Chef, you will be responsible for planning, organising, and managing the preparation and cooking of food for our busy dining establishment. Your day-to-day duties will include:
Menu Engineering & Costing: Designing and updating innovative brunch and seasonal menu items while managing kitchen budgets, food costing, and profit margins.
Inventory & Supplier Management: Sourcing premium ingredients, negotiating with food suppliers, managing stock levels, and controlling kitchen waste.
Kitchen Leadership: Supervising, coordinating, and training junior kitchen staff, line cooks, and apprentices in high-pressure service environments.
Quality Control: Monitoring the quality, presentation, and consistency of all dishes at every stage of preparation and service.
Regulatory Compliance: Enforcing and maintaining strict hygiene, food safety, and Workplace Health and Safety (WHS) standards across the entire kitchen facility in line with the NSW Food Authority guidelines.
Food Preparation: Demonstrating advanced cooking techniques and executing high-yield culinary tasks during peak breakfast and lunch service periods.
Required Skills, Qualifications & Experience:
To be considered for this role, you must meet the following strict criteria:
Qualifications: Must hold an Australian Certificate IV in Kitchen Management, a Diploma of Hospitality Management, or a verified equivalent international qualification.
Experience: A minimum of 1 to 2 years of full-time, post-qualification experience working as a Chef in a fast-paced, high-volume dining environment.
Technical Skills: Deep understanding of commercial kitchen management, stock rotation, menu design, and advanced commercial cookery methods.
Attributes: Strong leadership abilities, excellent communication skills in English, the ability to work under high pressure, and availability to work a flexible roster including weekends and early mornings.
